This is a traditional Napolitano oven with a Pompeii dome. For pizzaiolo, make 7-8 12-inch pies that are easy to use and large in capacity. The floors and walls of ilFornino Napolicento are made of thick refractory stone. It heats up for several hours and keeps temperatures over 300 degrees at night due to the excellent amount of insulation and heat mass. This makes it very economical to use less wood for burning. As for gas, you can use a gas-fired pizza oven commercial to retain heat or during a boost cycle to preheat the oven faster with digital controls. This pizza oven is best suited for commercial use.
