A classic Italian staple — homemade pizza dough brushed all over with a garlic butter flavoured with fresh rosemary leaves and then charred in a wood fired oven!
This foolproof recipe can be made in record time & is also great for using up any leftover pizza dough. Whether you’re looking for an alternative to a traditional Margherita or are in the mood for something a little bit more unique, this pizza is sure to please!
Basics
Wood fired pizza ovens char and cook the crust at high temperatures and create a smoky flavor. This charred, rustic taste isn’t achieved by gas or electric ovens and is a treat for the whole family to enjoy.
Before cooking, prepare the dough by mixing the flour with salt and yeast, then kneading it for 5 minutes. Once the dough has formed, return it to a bowl and let it prove for one hour.
To prepare the garlic butter, crush 3–4 garlic cloves and mix with 100g butter. Spread small spoons of the garlic butter over the base of your pizza dough.
To top off your pizza, place a couple of rosemary sprigs on the base. Slide it onto your pizza peel and into the oven. Bake for 1–2 minutes, turning regularly.
Preparation
It’s hard to beat the flavour of a freshly baked pizza brushed with butter, topped with garlic and fresh herbs and then charred in a blistering wood fired oven. This recipe makes a tasty starter to accompany any barbecue meal or simply to enjoy on its own.
To get started, preheat your oven targeting the pizza stone at 500degF for 45 minutes or until hot and bubbly. Place a pizza peel on the floor of the oven and stretch out one ball of dough to about 12”/16”.
Gently slide the dough off the peel onto a prepared baking tray and bake in the wood fired oven for a couple of minutes until the crust is cooked through and golden.
While the dough is resting, prepare the garlic butter and herb topping. Mix the butter, garlic and parsley together to create a delicious spread for your pizza.
Cooking
If you’re a pizza lover, then you will love this wood fired garlic pizza recipe. It’s simple, delicious, and a great way to use up leftover ingredients!
Before you begin cooking, preheat your wood-fired oven to a high heat. This will give the crust a crispy texture on the outside and soft, chewy inside.
You can also make the dough a day ahead and store it covered in the fridge. Then you can add toppings and bake it.
To assemble, cover a pizza peel with a light dusting of semolina flour and place the dough on top. Spread garlic butter over the dough and sprinkle with the cheeses.
Once you’re happy with the toppings, slide it onto your Baking Steel or stone. Give it a slight jimmy to help it settle, then broil for a minute.
Serving
Garlic pizza dough is great to eat on it’s own, but when it’s topped with garlic butter and cheese it’s simply unbeatable. It’s a perfect starter to any barbecue feast and it comes together in just 30 minutes!
To make the dough, mix together flour, salt, olive oil and yeast with your hands to form a smooth dough. Leave to prove for 1 hour before shape into two large balls and leave to proof for a further 30 minutes.
You’ll also need some butter that has been flavoured with a bit of garlic, parsley and a pinch of salt. Spread a generous amount of this delicious garlic butter over the base of your wood fired pizza.
Top it with mozzarella, tomato passata and some fresh arugula and serve. You can even add a drizzle of balsamic vinegar if you’re feeling a little fancy! It’s a fantastic recipe that will impress everyone at your next cookout.
